Red chipotle (jalapeño) chilli

One of the most popular and, globally speaking, the most widespread chillies is undoubtedly the jalapeño chilli, which actually comes in at least two varieties – it can be green or red in colour. The green chilli is one that has not yet ripened, whilst it takes on its characteristic red colour once it is fully ripe. Ripeness also brings with it more capsaicin, which means that as it turns red, the chilli becomes hotter, yet at the same time sweeter. On the Scoville scale, it is rated somewhere between 2,500 and 8,000 units, although the red varieties more often reach the upper limit. Our version of the red chipotle chilli also contains seeds, which certainly adds a few units to its Scoville rating. Variations in capsaicin content arise due to different growing conditions – climate, soil, watering frequency, etc.

The secret of the chipotle chilli, however, lies in its processing. It is not merely dried, but also smoked. Its distinctive smoky aroma makes it extremely popular and sets it apart from ordinary chillies and the dishes, sauces, marinades, etc. seasoned with them. It is particularly interesting and sought-after by barbecue enthusiasts and those who love smoky flavours; and, of course, let’s not forget that chipotle has a pleasantly spicy character and a distinctive chocolatey flavour.

Uses

Chipotle chilli is extremely versatile. It is a staple of Mexican cuisine, but also works well on pizzas, in barbecued dishes, in salads and even in soups. It also blends perfectly with other spices and herbs.

Chilli is also frequently used to help alleviate ailments and medical conditions, as well as for preventative purposes. It is often used in ointments to relieve psoriasis, arthritis and various types of pain. As it acts as a natural antibiotic and antiseptic, it is also used in regular but moderate quantities to relieve digestive problems, as it aids digestion, disinfects the stomach and intestines, and stimulates the secretion of gastric juices; it also has a slight effect on reducing insulin secretion. It can also help with headaches and improve cholesterol levels, whilst protecting the heart and blood vessels, as, in addition to beneficial capsaicin, it contains vitamins A and C as well as bioflavonoids, which have been shown to have a positive effect on our blood vessels. Increasingly, however, chilli consumption is also being linked to weight loss, as it generates heat in the body, which is responsible for burning fat and increasing energy expenditure, and this can consequently lead to weight loss. The release of endorphins – the ‘happiness’ hormones – can also help with weight loss.

When handling chillies, take particular care to ensure that they do not come into contact with the mucous membranes of the eyes and nose, whilst those with sensitive skin should also be careful when touching them with their fingers and should wear gloves if they have sensitive skin. Although chillies are completely natural and harmless, keep them out of the reach of children and pets.
