Why is xylitol a good substitute for ordinary sugar?

Xylitol is the only natural sweetener that does not create an acidic environment in the mouth – an environment that bacteria thrive in – and therefore does not cause tooth decay like other sweeteners. Furthermore, it is absorbed very slowly by the body, which prevents a rapid spike in blood sugar levels, making it suitable for people with conditions caused by blood sugar imbalances.

Xylitol is a 100 per cent natural sweetener with a very low glycaemic index (GI=13). It is derived from plants (fruit and vegetables), but is most commonly extracted from birch bark. It has been known as a sweetener for at least half a century. Until recently, it was known primarily as a sweetener used in oral care products (toothpastes, mouthwashes, chewing gum, etc.). In the body, it regulates and maintains blood sugar balance, which ordinary sugar simply disrupts. It is popular because of its neutral taste, its lower calorie content and the fact that it has no adverse effects on human health. It dissolves quickly and looks almost identical to white sugar.

Xylitol is used to sweeten food and drinks. The ratio used is the same as that for ordinary (white) sugar. 100 g of xylitol contains approximately 240 kcal (white sugar contains as much as 400 kcal).

It is also suitable for cooking and baking. It can be used to prepare desserts, both baked and raw. It does not alter the flavour of food or drink, but simply sweetens it.
